2 cups finely diced bartlett pear (approx. 1 ½ pears)
2 cups diced tomato – deseeded
2 tablespoons lime juice (juice of 2 large limes)
½ teaspoon sea salt
2 tablespoons fine chopped jalapeño – deseeded
½ cup finely diced red onion
1 cup chopped cucumber (approx. half an english cucumber)
½ cup chopped cilantro
3 medium cloves garlic
3 tablespoon olive oil
Fresh ground pepper to taste
1. Dice all ingredients as small as possible, ensuring the pear and cucumber are cut the same size and the onion and jalapeño are smaller.
2. Press garlic and add to a large mixing bowl with salt and lime juice.
3. Add all remaining ingredients to the bowl and stir.
5. Add more salt, pepper or lime if needed.
